Real seasonality
We do not try to have everything all year. The garden and orchard shape much of what reaches the kitchen.
Ligurian food in Val di Vara
An organic vegetable garden, produce from our farm, Ligurian and Lunigiana recipes, hands-on cooking and the pleasure of eating without rushing. Our kitchen changes with the seasons because it starts with what the land gives us.
Cooking for friends
At I Due Ghiri, cooking starts with what is available: vegetables from the garden, eggs from the farm, fruit picked at the right time, extra virgin olive oil, local produce and recipes that belong to everyday life here.
The menu changes. You may find pesto, farinata, vegetable pies, fresh pasta, testaroli or homemade desserts, depending on the season and what is available. The cooking is simple, Ligurian and influenced by nearby Lunigiana.

We do not try to have everything all year. The garden and orchard shape much of what reaches the kitchen.
Whenever possible we start with our own produce, completing the table with ingredients and specialities from nearby producers.
Tradition matters when it stays alive: recognisable dishes, carefully made without turning them into something artificially elaborate.
Our idea is in the name: cooking for friends means eating together, talking, tasting and feeling at ease.
From the land to the table
I Due Ghiri is also a 35-hectare organic farm. Figs, tomatoes, courgette flowers, fresh eggs, olives and other seasonal produce naturally become part of what we cook.
That direct relationship changes the way dishes are built: instead of starting from a catalogue of ingredients available all year, we begin with what is ready to harvest and what local producers can offer at that moment.
Vegetables, herbs and ingredients that change with the seasons.
Apples, figs and other fruit used at breakfast, in desserts, preserves and everyday cooking.
Fresh eggs from our hens and a daily relationship with animals and rural life.
Olives, extra virgin olive oil and local ingredients complete a kitchen rooted in Val di Vara.
Dinner at I Due Ghiri
Our kitchen is not reserved only for overnight guests. You can also come to I Due Ghiri just for dinner, provided you book in advance.
From June to September lunch service is suspended, while dinner remains the central moment of the day: local dishes, fresh ingredients and an informal atmosphere in the quiet of Val di Vara. Contact us before coming so we can confirm availability.
Get your hands into the dough
For guests who want to go beyond tasting, we organise hands-on traditional cooking workshops on request. They are suitable for beginners too and are designed first of all as something enjoyable to share.
In our kitchen you can learn preparations such as fresh pasta, ravioli, homemade bread and traditional desserts. Depending on the season and programme, pesto, focaccia and other Ligurian recipes can also be included.

Eating near Cinque Terre
Val di Vara lies inland from La Spezia, within easy reach of Cinque Terre. Food here is closely linked to vegetable gardens, olive oil, seasonal produce and family recipes.
Spend the day on the coast or in La Spezia, then come back to the countryside for dinner. It is a simple way to combine the sea with the quieter inland valleys.
